
Eating healthy coffee cake is a great way to satisfy your sweet cravings without sacrificing your health. You can make a healthy version of coffee cake by using whole-wheat flour, natural sweeteners like honey or maple syrup, and adding in nutrient-packed ingredients like nuts or berries. Ingredients for cake:
1/4 cup coconut oil (or 1/2 c. applesauce)
3/4 cup plain, Greek yogurt
2/3 cup sugar (or sugar substitute/honey)
2 large eggs
2 tsp vanilla extract
1 1/3 cup whole wheat flour
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 tsp ground cinnamon
1 scoop of your favorite plant-based protein powder (optional)
Ingredients for streusel:
1/3 cup light brown sugar
1/2 cup whole wheat flour
1 1/2 tsp ground nutmeg
1/2 tsp cinnamon
3 tbs cold butter, cubed
Directions:
- Preheat the oven to 350 degrees. Lightly grease and flour an 8x8" baking dish.
- To make the streusel: whisk the brown sugar, flour, cinnamon and nutmeg in a small bowl. Cut in the butter cubes with a fork or a pastry cutter until mixture forms small crumbs. Refrigerate mixture until ready to use.
- To make the cake: beat together eggs, oil, Greek yogurt, sugar and vanilla in a large bowl.
- Add the dry ingredients and mix until just combined and moistened. (add a little milk if the mixture is too dry. The mixture will be thick!)
- Spread half the cake mixture in the baking dish, and sprinkle half of the streusel mixture on top. Then layer the rest of the cake mixture, and Sprinkle the remainder of the streusel mixture on top.
- Bake for 20-25 minutes (or until a toothpick inserted in the middle comes out with just a few damp crumbs).
- Cool for 15 minutes before cutting.
