Healthy Granola

Granola is a popular breakfast food that is known for its crunch and versatility. Making your own granola at home is not only easy, but also allows you to customize the ingredients to your own taste preferences.

 

I don't always have time to bake and cook every day, but I do sometimes meal prep for the week when I know I will be busy. This saves me time in the kitchen during our busy weeks. This is a great recipe to meal prep!

 

Ingredients:

  1. 4 cups old fashioned oats
  2. 1.5 cups raw nuts and/or seeds (I used 1 cup sliced almonds and 1/2 cup pepitas).
  3. 1 tsp fine grain sea salt
  4. 1/2 tsp cinnamon
  5. 1/2 cup melted coconut oil
  6. 1/2 cup maple syrup or honey
  7. 1 tsp vanilla extract
  8. 2/3 cup dried fruit, chopped if large

 

Directions:

  1. Preheat oven to 350 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper.
  2. In a large mixing bowl, combine the oats, nuts/seeds, salt and cinnamon. Stir to blend.
  3. Pour in the oil, maple syrup or honey and vanilla. Mix until everything is lightly coated.
  4. Pour the granola onto your prepared pan and use a large spoon to spread it in an even layer.
  5. Bake until golden brown (about 20 minutes), stirring halfway through. The granola will crisp up as it cools. Let the granola cool completely, undisturbed, before breaking it into pieces.
  6. Stir in dried fruit before packaging into an airtight container. Store at room temp for 1-2 weeks.

 

Serve with your favorite organic Greek yogurt, dairy free yogurt, milk, or as a topping for fruit bowls for a delicious and healthy breakfast option.
