
This is one of my kid's favorite snacks of all time! Bonus points that this is healthy.
There's quite a lot of recipes out there for protein bites or energy bites. The basic recipe seems to always be oats, peanut butter, honey and coconut flakes.
Ingredients:
- 1 cup (dry) old fashioned oats
- 2/3 cup toasted, unsweetened coconut flakes
- 1/2 cup peanut butter
- 1/2 cup ground flax seed or chia seeds
- 1/3 cup honey
- 1/2 cup mini chocolate chips (optional)
- 1 tsp vanilla extract (optional)
Directions:
- Add everything to a bowl and mix well until combined.
- Stick the bowl in the fridge for about half an hour to chill. After chilling, take the bowl out and start rolling 1-2 tbs of mixture into a ball.
- Add more honey or peanut butter if things are not sticking properly. Store in an airtight container in the fridge for up to 2 weeks. Or freeze for much longer.
