Protein Energy Bites

This is one of my kid's favorite snacks of all time! Bonus points that this is healthy.
 
There's quite a lot of recipes out there for protein bites or energy bites. The basic recipe seems to always be oats, peanut butter, honey and coconut flakes.

 

Ingredients:

  • 1 cup (dry) old fashioned oats
  • 2/3 cup toasted, unsweetened coconut flakes
  • 1/2 cup peanut butter
  • 1/2 cup ground flax seed or chia seeds
  • 1/3 cup honey
  • 1/2 cup mini chocolate chips (optional)
  • 1 tsp vanilla extract (optional)

 

Directions:

  1. Add everything to a bowl and mix well until combined.
  2. Stick the bowl in the fridge for about half an hour to chill. After chilling, take the bowl out and start rolling 1-2 tbs of mixture into a ball.
  3. Add more honey or peanut butter if things are not sticking properly. Store in an airtight container in the fridge for up to 2 weeks. Or freeze for much longer.
